In an ongoing email conversation, I asked a jujitsu friend today whether he thinks I think too much. He replied, “if you didnt think as much, do you think you would end up getting in trouble?”
Me: “Huh. I never thought about that before. (See, I DON’T think too much!)
I wonder if my thinking is mostly after-the-fact, justificational thinking, or whether it’s consideration-thinking where I think out a situation before acting and therefore avoid poor decisions. I daresay it’s mostly the former and occasionally the latter. Well, maybe not, cuz I think a lot about random things in an attempt to compulsively explain things to myself. Like, how the hell are Dippin’ Dots made? Cuz if they’re ice cream droplets on a surface that are then frozen, they wouldn’t be as round. If they’re that round, that’d imply they were mid-air when they were frozen, but they couldn’t have been too impacted by gravity because they’re not droplet-shaped, they’re spherical. So how are they being so quickly frozen before they’re even allowed to fall? What were we talking about again?”
Him: “what? sorry… i wasn’t paying attention…. “
one night…. not so long ago, I couldn’t sleep.
So I turned the tv on.
I laid there as the clock ticked by slowly.. it was 3 am.
Then…
as I was getting ready to turn the tv off.. (Discovery channel), I heard that the next show coming on was ….
“How did they do that? Dippin’ Dots”
Yes… I stayed awake another half hour or so just to see the dippin’ dot factory and how those frozen ice cream balls *yumyum* were made.

no FREAKING way. Every time I flip thru the programming guide (satellite), I put the cursor on all the “How Do They Do It” shows JUST to see if they ever explain Dippin Dots, and I’ve complained aloud to Mr. W on MANY RECENT OCCASIONS that “You’d think they’d explain how they make Dippin Dots, but NOOOO, it’s bike chains, cardboard, and hot dogs.” ARRGGHHH! I’ve tried searching for the info online and they’re very quiet about their trade secrets!

“They take little tiny drops of ice cream liquid and drop them into liquid nitrogen (freezing it crygenically). Since liquid nitrogen is so cold, the droplets freeze super fast and stay in that nice little BB shape. Of course, the ice cream has to be kept super cold until it is eaten so it doesn’t melt into a puddle – this is done with dry ice (solid CO2).
Dippin Dots makes all its ice cream at a single factory in Paducah, Kentucky – the factory uses about 10,000 gallons of liquid nitrogen a day to make about 5000 gallons of ice cream.”
I KNEW IT!!! I’d always thought it was liquid nitrogen, since that’s the only thing that could do an instant-freeze like that! But I thought it was more of a spraying nitrogen within a chamber and the droplets of ice cream pass through the spray on their way down and freeze into drops before they hit, never occurred to me you can float/submerge the ice cream droplets inside liquid nitrogen. I’ve always said I wanted to visit a Dippin Dots factory. And not just for the free samples!
Off to Paducah we go!!

I got to thinking… and did a little searching after 2nd guessing myself about the Discovery channel. I think it was actually on the TRAVEL channel, they did a special on ice-cream, and that’s when they visited the factory in KY and walked you through the DD process…. maybe it was the discovery channel… I’ll never know I guess unless it’s repeated…
